SUPER FAST SPROUTED QUINOA & RICE SUPER BOWL



The feedback that I get most often from my friends about my food recipes is that although they look delicious and healthy, they simply look too elaborate and complicated. I guess it can seem that way, but they truth is that most of the things I throw together don't take more than 15-20 minutes. Most of the times I will look in my fridge and pantry, grab a few things and then try to make them work. I don't really plan my meals way ahead of time. I have a few staples , which I try to keep on hand at all times. If you want a post about what they are, comment down in the description box, and I can write one.

Today though, I thought I'd share with you a quick and easy recipe to make - but don't let it's simplicity fool you, it is delicious and nutrient packed! I'm going to call this the Sprouted Quinoa & Rice Super Bowl - and there are many, many variations of this that you can make, it is easy to modify (add your own fave veggies, change the dressing, use hummus instead of beans, etc.)













SUPER BOWL

Ingredients:

  • 1 cup of  sprouted rice & quinoa blend from Tru Roots (you can use regular quinoa, or rice)
  • half a cup of canned corn 
  • 2 medium tomatoes (diced)
  • 1 zucchini (spiralized)
  • a handful of cilantro
  • 2 tbsp of organic balsamic dressing
  • 1 scoop of beans (you can use the canned ones or make a batch of them during the weekend and either freeze them and use as you need)
  • a small avocado
  • 1 tbsp of salsa

Steps:
  • cook the rice/quinoa
  • in the meantime chop/dice/spiralize your veggies
  • once the grains are cooked layer your bowl as you like - there really is no 1 way to do it, have fun and do your won thing
  • the balsamic and salsa are really all the condiments you need, but if you need to add anything else feel free to do so!
*note: If you won't use up the whole cup of rice/quinoa, keep the rest of it in the fridge and cut your time in half next time you make your bowl!



























That's it you guys, a simple, quick, easy, but super nutritious, healthy and delicious meal idea. I'm thinking that I might pack this in a mason jar for tomorrow lunch. Yum :)
