THE BEST MANGO SALAD



You ever eat something that makes you feel like there is a party going on in your mouth, and your taste buds are the V.I.Ps?! If you have, then you know exactly how I felt today when I had this bright and gorgeous salad! Made out of spiralized and Julianned veggies, this salad is unique because of it's textures, flavors, and colors. You have to try this one!




I get asked often, how I spiralize my veggies, so I thought I'd introduce you to my spiralizer, Flor. I got her as a birthday present last year, at the time when I was first starting to explore the raw vegan world. Ever since, she has served me well, and this week she has become indispensable.


The recipe for this scrumptious salad is quite simple. Please note that if you don't have a spiralizer you can still make this salad by Julienning the veggies, or by using a shredder - work with what you've got!

MANGO SALAD

Salad Ingredients:
  • 1 sweet potato (peeled & spiralized)
  • 1 zucchini (spiralized)
  • 1/3 of a medium jicama (Julienned)
  • 1/2 beet (Julienned)
  • 1 radish (chopped)
  • 1/2 mango (thinly sliced)
Dressing Ingredients:
  • 2 tbsp. hemp seeds
  • 1/4 small onion
  • 1 yellow pepper
  • handful of cilantro
  • 1 lime
  • 1/2 dried mangoes
  • salt to taste (I'm trying to cut down on salt)
  • fresh ground pepper to taste
Blend all dressing ingredients until smooth and creamy.


Mix all your veggies together, add the dressing and top off with juicy mango slices. All you have to do now is sit down, and let the fiesta in your mouth begin!
