RAW NOODLE VEGAN PASTA & CUCUMBER SALAD


Today I was home, feeling slightly tired and my tummy feeling heavy - I knew it would be better to take a break from wheat today. I am not needing to be on a complete gluten-free diet, but I do find I feel a lot better when I consume less wheat and so I  have transitioned into a limited-gluten diet. Today for lunch I decided to bring out my spiralizer and make a good yum raw noodle pasta. The recipe is quite easy, here it is:

You'll need:

- 1 large zucchini
- tomato sauce
- 1 or 2 mushrooms
- Yves "ground beef"
- parsley
- a spiralizer

Step 1:

Spiralize the zucchini


Step 2:

On a pan, warm the pasta sauce and add mushrooms and "ground beef" - try to not cook the mushrooms too much, vegetables loose the majority of their nutrients when cooked.

Step 3:

Serve sauce on top of noodles - top it off with parsley and enjoy!



While I had the spiralizer out, I figured I'd eat a cumber salad with a flare !


Add lemon and salt and I am one happy girl, my tummy will be thanking me as well! :)
