PEAR & WALNUT SALAD

I made this salad to accompany the Zucchini pomodoro I served for dinner. The sweet taste of the pear balances the slight bitterness of the greens, while the walnuts give the whole experience a nice crunch. The salad is topped off with home made dressing.

CRUNCHY PEAR SALAD

makes 1 serving

   Ingredients:

       Salad
  • 2 cups of greens - I used Earth Green's organic Super-food Blend (baby kale, baby spinach & chard)
  • 1 pear
  • sprinkle of raw chopped walnuts (you can also use cashews)
       Dressing
  • 1 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 tbsp olive oil 
     
   Process:
  1. Wash and slice pear in thin long pieces
  2. Serve over the bed of greens
  3. Mix all dressing ingredients in a separate small bowl
  4. Dress your salad up with nuts and dressing
