Today’s Green Juice

  • 1 cucumber
  • handful of spinach
  • 4 baby bok choy
  • handful of alfalfa & radish sprouts
  • half a lime
I got the idea of pairing these ingredients after reading the amazing health benefits they provide! It was also quite handy that  I had them all at home ready to use. Here are some of the fact about each:

  • Cucumbers :  rich in vitamin A, B1, B6, C & D, folate, calcium, magnesium, and potassium. For a full list of health benefits click here
  • Spinach: excellent source of vitamin K, vitamin A, magnesium, folate, manganese, iron, calcium, vitamin C, vitamin B2, potassium, and vitamin B6. It’s a very good source of protein, phosphorus, vitamin E, zinc, dietary fiber, and copper. Plus, it’s a good source of selenium, niacin, and omega-3 fatty acids.   • Alfalfa & Radish sprouts: Alfalfa sprouts are rich in calcium, folic acid, magnesium, manganese, molybdenum, phosphorus, potassium, silicon, sodium, zinc. I know it is 19 days past New Years, but my two best friends an I had a blast and I'd like to share it with ya'll.

First we met at Ruth's house where she presented Erin and I with 3 matching rings - Ruth's (left)is brass, mine copper (middle) and Erin's silver (right).
We then drove downtown to Ruth's big brother Sam's apartment and started snapping away. We often complain that we don't have any good quality pictures of all three of us, so we couldn't pass this chance up!

Well it wasn't quite what we had expected - last years winter camping was serious stuff,  I'm talking freeeezing! 
This year was way milder, with temperatures in the pluses and even double digits. 
We went to Pinary Provincial Park and had an amazing time - although we couldn't ski (I really didn't want to anyways), we went on some great hikes and had a blast.
My favorite part was the hike we took to the beach and though the sand dunes.
Overall it was a great time with great people!
