BEAUTY FOR A CAUSE: "BeYOUtiful" FUNDRAISER









 A few pictures from today's Seneca Student Federation "beYOUtiful" fundraiser event for the Typhoon Haiyan Fund at Seneca College King Campus! Thank you to all the students, and staff who came down to support this event. 

Make-up got did, nails got painted, hair got curled, straightened, sprayed, and massages were in super high demand - Rhey De Castro has magical hands. We hope to do a similar event next semester so stay tuned!!!

Thank you to Noe A Maltais for allowing us to run this event through his club and for having such amazing club members who helped make this day happen.

A HUGE thanks to my last minute volunteers who saved the day, we could have not done this without you!

ROASTED RED PEPPER HUMMUS


A couple of weeks ago Gastropost from the National Post asked if I'd be interested in joining them on their weekly food missions. I thought it would be fun, so I said yes. This week's mission is called Small Plates - Big Flavor. While it is acceptable to go out for dinner, take a picture and send it in, I thought I'd make my own flavourful "small plates" dish.






I chose to make a creamy roasted red pepper hummus, and oh my is it ever good. I knew that as soon as mom and little brother came home they would devour it. I cut up some cucumbers to use as chips, washed a few baby carrots and served some corn chips to go on the side. It was done in 15 minutes. 

I would call that a total success! Bonus: it's low fat :)













ROASTED RED PEPPER HUMMUS
*makes approx. 1/2 litre
Ingredients:
  • large can of chickpeas
  • 4 red roasted peppers
  • 2 tsps. of garlic pure
  • 1 tbsp. of tahini
  • juice of 1/2 lemon
  • himalayan salt & fresh group pepper to taste
Steps:
  • Throw all ingredients into a high speed blender and blend until a smooth paste consistency is achieved.
  • Serve with your favourite veggies, chips, and enjoy!



This hummus is so delicious it took all my willpower to not eat it all by the spoonful. This is the picture I chose to submit to Gastro post, I'm keeping my fingers crossed to get that newspaper feature!

Please do yourself a favour and make this, it takes 10 minutes to make tops, and you and yours will love it!

BLUEBERRY PINEAPPLE RAW SMOOTHIE BOWL



Sometimes smoothies can get a bit boring - when that happens, pour it in a bowl, throw some of your favourite sliced/chopped fruits in, sprinkle your favourite topping (granola, nuts, seeds, hemp, chia seeds, etc.) and you've got a new and exciting breakfast. If you're in a hurry, pack it in a mason jar and go!!!



This morning I made a blueberry-pineapple smoothie, sliced some banana, sprinkled with raw hemp hearts and topped off with a few blueberries. Totally raw, totally yum, and totally filling.



BLUEBERRY PINEAPPLE RAW SMOOTHIE BOWL
*makes approx. 4 servings

Ingredients:

  • 10 pineapple spears
  • 2 bananas
  • 2 cups of frozen blueberries
  • fresh blueberries
  • 3 tbsps. raw hemp hearts

 Steps:

  • Throw the pineapple, 2 bananas, frozen blueberries, 3 tbsp. of raw hemp hearts, and enough water to get the blender to move - blend until smooth
  • If you want a swirly effect, blend all the yellow things first, pour into bowl and then do the same with the blueberries
  • Top off with bananas, fresh blueberries and raw, hemp hearts.
  • Enjoy!

SUPER FAST SPROUTED QUINOA & RICE SUPER BOWL



The feedback that I get most often from my friends about my food recipes is that although they look delicious and healthy, they simply look too elaborate and complicated. I guess it can seem that way, but they truth is that most of the things I throw together don't take more than 15-20 minutes. Most of the times I will look in my fridge and pantry, grab a few things and then try to make them work. I don't really plan my meals way ahead of time. I have a few staples , which I try to keep on hand at all times. If you want a post about what they are, comment down in the description box, and I can write one.

Today though, I thought I'd share with you a quick and easy recipe to make - but don't let it's simplicity fool you, it is delicious and nutrient packed! I'm going to call this the Sprouted Quinoa & Rice Super Bowl - and there are many, many variations of this that you can make, it is easy to modify (add your own fave veggies, change the dressing, use hummus instead of beans, etc.)













SUPER BOWL

Ingredients:

  • 1 cup of  sprouted rice & quinoa blend from Tru Roots (you can use regular quinoa, or rice)
  • half a cup of canned corn 
  • 2 medium tomatoes (diced)
  • 1 zucchini (spiralized)
  • a handful of cilantro
  • 2 tbsp of organic balsamic dressing
  • 1 scoop of beans (you can use the canned ones or make a batch of them during the weekend and either freeze them and use as you need)
  • a small avocado
  • 1 tbsp of salsa

Steps:
  • cook the rice/quinoa
  • in the meantime chop/dice/spiralize your veggies
  • once the grains are cooked layer your bowl as you like - there really is no 1 way to do it, have fun and do your won thing
  • the balsamic and salsa are really all the condiments you need, but if you need to add anything else feel free to do so!
*note: If you won't use up the whole cup of rice/quinoa, keep the rest of it in the fridge and cut your time in half next time you make your bowl!



























That's it you guys, a simple, quick, easy, but super nutritious, healthy and delicious meal idea. I'm thinking that I might pack this in a mason jar for tomorrow lunch. Yum :)

CREAM OF MUSHROOM SOUP






Winter weather is here, and there is nothing like a hot bowl of creamy soup to warm and cozy up the soul. After becoming lactose intolerant, I stopped being able to have my favourite types of cream soups -  until now that is. I was looking for a quick, creamy alternative to my mom's amazing cream of mushroom. Although still not perfected, this recipe comes quite close.


CREAM OF MUSHROOM SOUP

Ingredients:
  • 9-10 baby portobello mushrooms
  • 3 portobellini mushrooms
  • half of a small onion
  • 2 cups of unsweetened almond milk
  • 2 tbsps. of nutritional yeast
  • thyme, pepper, nutmeg & salt to taste
  • a cube of vegetable bouillon (I use the one from Celifibr)
Steps:
  • Throw everything except the 3 portobellini mushrooms and a small piece of onion into your high speed blender and bed till smooth
  • Dice the portobellini mushrooms into medium sized cubes and do the same with the small piece of onion you saved
  • In a medium sized pan add a bit of oil and caramelize the mushrooms and onion 
  • Then pour the blended mushroom mix, lower heat and let simmer for a bit - this is a good time to taste for salt and spices - add as you need to.
  • Serve and enjoy!

CHOCOLATE-BANANA PROTEIN PANCAKES






When mom asked me to take care of breakfast this morning, I knew immediately that I wanted to make my gluten-free, vegan chocolate-banana pancakes (I know, long name.)




I've made these delicious and super nutritious babies before but as you all know, I suck at writing recipes because I never measure ingredients. This morning I made the tedious conscious effort to measure each ingredient... it only added a few hours to the preparation (haha okay fine, not hours, but it was still annoying - but you guys are worth it!)


These pancakes have a sweet spot in my heart because they are the first thing I ever cooked for my now boyfriend at the beginning of the weekend where we both fell for each other... magical pancakes maybe? Haha, who knows...









Anyhow, without further ado, here is the recipe:

Ingredients:

  • 1 cup of chocolate almond milk
  • 1 1/3 cup of  unsweetened almond milk
  • 3 scoops of chocolate Vega One powder
  • 2 cups of Wild Roots gluten-free pancake  mix
  • 1.5 cups of apple sauce
  • 2 bananas
  • 1/2 tsp. of organic maca powder (optional)
  • 2/3 tsp. of organic vanilla extract
  • 1/2 cup of vegan chocolate chunks

Steps:

  • Throw the milks, Vega One, flour, apple sauce, bananas, maca powder, and almond extract in your blender and mix.
  • Pour mix into bowl 
  • Coat cooking pan with your favourite butter alternative - I use Earth's Balance traditional spread
  • With a ladle, pour some of the mix unto the pan, and drop a few chocolate chunks 
  • When the bottom side is cooked, flip it over and cook the top until it's nice and ready!
  • Serve with your choice of toppings: strawberries, coconut flakes, maple syrup, honey, agave, etc. (I used organic blue agave syrup and strawberries, oh my, so good)
  • Enjoy!!!

STYLE POST: FALL & WINTER COAT INSPO


So it's that time of the year in Canada - our magical sun tans are fading faster than we can say eh, and our days are getting shorter & colder. Fall is not my favourite season because in my mind it is the sad prequel to months and months of snow, frost, and brutal cold. Even I have to admit however that there is beauty in it - the way leaves change give us a spectacular show of color before the trees go into hibernation.

Another favourite this season is the fall style! The colors, textures and layers... I love, love, love it - A month ago I had already packed up my summer clothes and brought out my favourite coats, boots & scarves. If you're like me, you probably did the same. Let fall come, winter pass and pretty please bring me spring soon. For now, I'll enjoy cozying up in my favorite ugly sweater and best-loved oversized coats & scarves!

30 DAY JUICE FAST | NOW A 40 DAY JUICE FAST | 2ND UPDATE (DAY 13)


I'm on day 5 of my 30 day juice fast (strictly juice) - post 7 day transition-in - so actually day 13  (I decided to do a week of "transitioning in"). I had some struggles this week, I fell off a bit, but dusted myself off and kept on going! I have also extended my juice fast to 40 days.

DAY 9: MASSIVE JUICING DAY

We are getting a new 2nd fridge at home and I had to defrost the old one which meant I had to use up all my produce today unless I wanted it to spoil. This is what happened...

Getting my mason jars ready: I store my juices in mason jars like these. When I do massive juices I like to use the 2L jars because they are more space efficient, but the 1L ones work as well. The juice keeps well in these jars & in the fridge for up to 3 days.


Getting my juicers ready: when I do massive juices like this, I use both my juicers so I don't burn the motor on either. I use my Power Juicer to juice water filled produce (i.e. apples, cucumbers, oranges) and use my Green Star for all my greens and non- watery fruits and veggies.


Getting my produce ready: this is pretty much ALL the produce in my fridge! Isn't it pretty?! That was a whole lot of prepping, but knowing that I am taking care of my body makes it all worthwhile


Getting down & dirty: Lots of mess & color - oh would you look at that foam!


Yay new juice!: experimenting with combinations lead to a new discovery. This here is "Sweet Ol' Vitamin C" (I decided to add the 'Ol after I had written Sweet Vitamin C on the lid)

Another new juice!: I think I will call this one "Purplemania". The recipes for both juices will be up when I figure out exact ingredient quantities. I am an intuitive person and never look at or write down recipes, which is why I suck at posting recipes here. I'm trying to get better at that - please be patient with me.

Voilà:the grand total was 9 liters of pure juiciness!!! The picture only shows 8 because mom and I drank the 9th! :)
